This is the correct way to eat Peking Duck in Beijing -- wrapped inside a crepe with sauces & strips of cucumber & onion. Our server was very strict -- Stan has since referred to her as the "Duck Nazi" because if you did it wrong (like I kept leaving out the raw onions) she would take it apart & re-roll it! I found that I really liked the duck just plain though . . .




The dishes were beautiful, and although Stan is the only one who ordered the duck, our server insisted that we all be served.
BTW -- Peking is the original name for Beijing . . .
